Our cultivar

Our olives belong to the "BIANCOLILLA DI CALTABELLOTTA" cultivar, considered among the oldest among those existing in Italian olive groves, highly appreciated for its great productivity and for its early entry into production.
This variety has oval fruits with an intense green color tending towards white in the initial ripening period and which, subsequently, take on a shade of red tending towards purplish (hence the name). The leaves are green with golden highlights.

The oil has an intense, clean, fruity aroma, with almond and herbaceous notes. It has a beautiful light green color.

The flavor is sweet, light, slightly spicy, sometimes with hints of artichoke and fresh tomato. It has low acidity and is, therefore, rich in antioxidant substances.

Thanks to these characteristics, our Extra Virgin Olive Oil is a natural source of well-being and is ideal for making every dish noble, enhancing its taste.

The olive harvest

It's a time for sharing and joining forces.

From September to November/mid-December, we carefully harvest the precious fruits of our land.

The methods we use are: browsing, which consists of detaching the olives from the branches with the help of ladders and nets on the ground; combing, through the use of flexible plastic "combs" called rakes with which the fruit is removed by hand and dropped onto the nets; finally, facilitated harvesting, which is carried out using electro-pneumatic aids, which facilitate the detachment of the fruit.

The whole family participates in the collection. Our oil thus acquires the special flavor of the results obtained with the union of forces, of the tiring but rewarding days of work together and of all the hopes and expectations that we carry with us, together with the passion for what we do.

The pressing of olives

The olives collected from the nets are poured into ventilated boxes and transferred to the oil mill where they are processed, on the same day of harvest, (within the following 24 hours) through cold pressing processes with a continuous cycle system.

The oil obtained is naturally decanted before being bottled to keep all its organoleptic properties intact.

Our company, in order to obtain an oil of excellence, both for the particular cultivation techniques and for the taste and organoleptic characteristics, follows the regulations of organic agriculture.

Ours is a family-run company that, for generations, has been passionately and meticulously dedicated to olive cultivation, following the method of organic farming in accordance with a genuine peasant tradition.

Our olive groves extend over 15 hectares in the regions of Chimino, Pietragrossa, and Martusa within the territory of Caltabellotta (Ag).
